Challenge 1, Day 15 (Part 3) Oven-Roasted Asparagus

(Printable Recipe)
This oven-roasted asparagus dish is one of my favorites.  Parmesan cheese mixed with garlic makes these lovely stalks tender and tasty.

We paired this with Slow Cooked Ribs and Parmesan and Rosemary Roaster Potatoes.  Lets just say our stomachs were full and happy.

Challenge 1, Day 15 (Part 2) Parmesan and Rosemary Roasted Potatoes

As mentioned in my previous post, I made 2 sides to go with the Slow Cooker Ribs last week.

A couple of months ago, I took a cooking course as a gift from some friends. One of the dishes they made was roasted potatoes.  Since then, I have been craving to make some.  This recipe is not the one from then but a variation of another one I found online.

The potatoes were very tasty and cooked long enough that they had a nice crunch to them.  Paired with the ribs and the asparagus, my tummy was a happy camper.

Challenge 1, Day 8 - Spinach Lasagne Rolls

Another scrumptious little treat I found.  As you have probably learned. I find most of my recipes through Pinterest.com or through thepineerwoman.com.  You can assume from now on, that's where I found it.  I'll let you know if that's not the case.

I was never a lasagna person growing up. Not sure why. But when someone introduced white lasagna and spinach lasagna, I was sold.  This is a nice little adjustment to your typical lasagna recipe, using the noodles to make rolls instead of creating a layered dish.  Its great for portion control and its rather easy to make.

Challenge 1: Day 7 - Slow Cooker Mac N Cheese

I love Mac N Cheese.  Home Made style, not from a box.  There is something about cheese melted over noodles with breadcrumbs that just makes my heart melt, my mouth water, and my stomach jump for joy.

I also love using the slow cooker (aka crock pot).  I think we discussed this before. I really love my crock pot... or rather I love cooking in a crock pot.

I found this recipe through... Take a wild guess... Yes, through Pinterest!  So i put it on my list of to makes and here we go.
