Pinterest To Life: Baked Eggs

So I had surprisingly become lax on my pinning lately. I must have over used the pinterest muscle early on and then just stopped until a week or two ago and then, well, I just kinda got carried away.

One of the finds was this yummy Baked Egg treat.

So one day this week I decided to give it a try. I changed up the ingredients with what I had in the house. I thought I'd share with you my version of this baked breakfast treat. I've made it three times and I do love it.

What you need
Ramekins or small cooking vessels 
2 eggs per ramekin
goat cheese
Bacon (I had bacon bits on hand so I used those)
spinach/Arugula mixture

The ramekins I have are actually much smaller than the ones at Use Real Butter (above).  I can tell by the amount of space her yokes had.  


Because of the size of the ramekins I had, the two extra large (and even the large) eggs were a little too much.  I ended up needing to pour out about 1/4 the whites of the egg.

Add in the bacon to your liking.

I added a few sprigs of arugula and spinach (uncooked). 

Then crumble the coat cheese. I used a herbed goat cheese.  If you don't use a flavored goat cheese, I recommend adding some herbs to the mix. 

Then I baked it at 350 for 10-12 minutes.  I checked it at 6-8 minutes.  I prefer my yoke still runny, but its a hard balance with making sure the yokes are cooked.  That is based totally on preference.  Keep an eye on it until it reaches the right tenderness for your taste.


This was a delicious breakfast.  I am totally addicted!  Its easy and relatively fast.

  1. Your recipe is not bad enough but you cannt make vegetarian dish, replace eggs and goat chesse.Why not to try something another baked recipe which has vegetables.

  3. Those look amazing. Baked eggs are seriously one of my favorite things to eat! I often make them in a muffin pan... butter the pan, wrap a piece of bacon around the inside of each muffin cup, add a few drops of cream/butter/water to the bottom of each cup, add egg and bake. Yum!

  5. mmm looks yummy! There is this place in Athens (GA, where I go to school) called mamas boy and they make the most delicious vegetable and egg scrambler! eggs, spinach, tomatos, onions, goat cheese, and a taste of heaven. I'm craving it right now! this reminds me of it!
