{Guest Post} Cinnamon & Sugar Chips

HAPPY FRIDAY!
We made it through another week!  And to celebrate, I want to introduce you to Lindsay from Little Mudpies.  She is joining us today.  Love this girl and her blog.  I can't wait for you to meet her.

Hi Singledou[b]t readers, I am Lindsay and I blog over at Little Mudpies
There you will find a lot of stores about my kids, simple recipes and even some DIY and tutorials

When Kim asked if I would like to guest post, I immediately said YES
Then I asked myself out loud "what were you thinking?"
My husband heard me talking to myself and actually asked if I was feeling okay!
Guest posting makes me nervous.
Something about hanging out on someone else's blog
gives me the butterflies.
Then I thought about how awesome my recipes are (humor me okay?!)
and decided that I should share one of them!!

One of our favorite treats is Cinnamon & Sugar Chips.
I love to make a bunch of them at one time and store them in a Ziploc bag.
They last a few days {actually I'm not sure how long they will last, seeing we eat them fast!}

Anyway. They are super easy to make. All you need is
Soft tortilla shells - as many as you want
Melted butter or margarine
Mixture of cinnamon and sugar

Preheat oven to 350 degrees.
Cut your tortillas into 8th.
Dip each piece into your melted butter
Set the tortillas on a sprayed baking sheet and sprinkle with the cinnamon & sugar mixture.
Bake for 8 - 10 minutes or until crunchy

I love to serve them with "berry salsa" which is basically defrosted frozen berries - I defrost mine in the microwave. You could of course, use fresh berries and cut them up. But there is something about the juiciness of the frozen berries and the warmness of defrosting them in the microwave that I love.

They are also delicious in a scoop of Vanilla Bean ice cream.
Oh, and totally healthy!

Enjoy!

If you're looking for more recipes or even a peek into your daily adventures. I'd love to have you stop by and say hi sometime.
You can also follow along with me on Facebook and Twitter

Thanks so much for having me Kim!!
