Pinterest To Life: Baked Eggs

So I had surprisingly become lax on my pinning lately. I must have over used the pinterest muscle early on and then just stopped until a week or two ago and then, well, I just kinda got carried away.

One of the finds was this yummy Baked Egg treat.

So one day this week I decided to give it a try. I changed up the ingredients with what I had in the house. I thought I'd share with you my version of this baked breakfast treat. I've made it three times and I do love it.

What you need
Ramekins or small cooking vessels 
2 eggs per ramekin
goat cheese
Bacon (I had bacon bits on hand so I used those)
spinach/Arugula mixture

The ramekins I have are actually much smaller than the ones at Use Real Butter (above).  I can tell by the amount of space her yokes had.  


Because of the size of the ramekins I had, the two extra large (and even the large) eggs were a little too much.  I ended up needing to pour out about 1/4 the whites of the egg.

Add in the bacon to your liking.

I added a few sprigs of arugula and spinach (uncooked). 

Then crumble the coat cheese. I used a herbed goat cheese.  If you don't use a flavored goat cheese, I recommend adding some herbs to the mix. 

Then I baked it at 350 for 10-12 minutes.  I checked it at 6-8 minutes.  I prefer my yoke still runny, but its a hard balance with making sure the yokes are cooked.  That is based totally on preference.  Keep an eye on it until it reaches the right tenderness for your taste.


This was a delicious breakfast.  I am totally addicted!  Its easy and relatively fast.

DIY Starbucks Breakfast Sandwiches


I have a love/hate relationship with Starbucks.  I truly love about 80% of the things on their menu, from their coffees to their pastries to their breakfast sandwiches.  My issue?  I can't afford them.  I can't afford $4-$8 a day it would take to feed the habit it is to go there.  So I am reduced to DIY Starbucks.  Sometimes that means drinks but this time, it means breakfast sandwiches.  I love their low-fat turkey bacon english muffin. Not because its low-fat but because it got bacon, cheese and an english muffin.  I found a way to make my own version for about 1/3 of the cost.  My version isn't so low-fat but its still a hearty and good for you breakfast with all of its protein and fiber.

The great thing about doing it this way is that I can make 6 at a time just as easily as I can make 1 and reheat them as I want them.

Challenge 1, Day 2: Bacon, Egg and Cheese Cups


I saw these on someones Pinterest a few weeks ago and have been waiting for the opportunity to make them. I didn't change the recipe at all partially because i forgot but mostly because there is not much to change.  They are fabulous and not that hard to make.  I think 2-3 per person are a decent meal.  You can't get better then bread, bacon, cheese and eggs.
Ingredients:
6 slices of bacon
6 slices of bread
Shredded cheese
6 eggs
Directions:
Preheat the oven to 400° F.  Grease 6 wells of a muffin pan with butter or not so fancy cooking spray.    


In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy. Don't be afraid if it doesn't look cooked enough.  It will cook in the 400° F oven you'll soon be putting them in.


Transfer the partially cooked bacon to a paper towel to drain the lovely bacon from it excess grease.



Shred enough cheese for the 6 rounds.


Cut the bread into small rounds.  You can use a circle cookie cutter or even the brim of a glass. 


Press the bread rounds into the greased muffin wells.  I put a little extra pieces of bread around the edges.  Cause, well i love bread.

Curl a piece of bacon around the edges of each piece of bread, positioning it between the bread and the muffin tin to help keep it in position.  

Depending on the size of the bacon, you might have to cut the pieces and, well, eat the remaining bits on their own... 


Sprinkle the cheese into the wells.  Use as little or as much as you like. I love cheese just as much, if not more, than i like bread and bacon...


One at a time, crack an egg, removing about half of the white, and dropping the remaining white and yolk over each piece of bread, being careful not to break the yolks.  I used extra-large eggs here but i would recommend medium or large if you can. I ended up throwing away a lot of egg whites. 

Once all the bread pieces have been topped with eggs, bake until eggs are cooked through to your liking (about 6-10 minutes) and bacon is crispy.  

The eggs might look uncooked but they are likely cooked enough to eat after 6 minutes.  If you like a little run to your eggs then you don't need to cook them more then 6-8 minutes.



Run a knife around the edge of each muffin well and pop the egg cups out.  Season with salt and pepper to taste and serve immediately.

These were truly delicious and will definitely be made again.
